Passend zum Oktober geht es dieses Mal um ein Obstgemüse. Na, hast du schon eine Ahnung? Sobald uns der erste kühlere Wind um die Nase weht, wir morgens und abends Kerzen anzünden und kuschelige Chunky Knits tag täglich getragen werden, landet dieses manchmal orange, manchmal gelbe, sogar braun, beige, weiß farbende Obstgemüse als Deko oder Lebensmittel in unserem Zuhause.

In der Küche kann Kürbis einfach alles sein, ist quasi der Universalspezialist für jedes Gericht. Ob als Vorspeise, Hauptgericht, ja sogar Dessert – Kürbis hat so viele Variationen, dass ich aus dem Tippen gar nicht mehr herauskommen würde.
Aber was kocht oder backt man als erstes, wenn man die Saison einläuten mag? Genau das habe ich mich auch gefragt und mich für Kürbispüree entschieden, denn daraus lässt sich super viel kreieren. Aus dem gleich folgenden Rezept habe ich einen herzerwärmenden Pumpkin Spice Latte für klein und Groß gemacht, süße Kürbispancakes und weil noch etwas übrig blieb, war aus dem Rest flott eine Kürbiscremesuppe gezaubert. Gut verschlossen hält sich das Püree ungefähr fünf Tage im Kühlschrank, eingefroren hast du sehr lange etwas davon.
Kürbispüree
Zutaten:
1 Kürbis deiner Wahl (Hokkaido finden wir besonders lecker, da er nussig schmeckt und man ihn nicht schälen muss)
Zubereitung:
Wie? Das war es schon? Keine weiteren Zutaten? Tatsächlich keine weiteren Zutaten.
Halbiere den Kürbis und entkerne ihn (die Kerne kannst du prima im Backofen rösten). Schneide alles in kleine Stücke und packe sie in einen großen Topf. Nun bedeckst du den Kürbis gerade so mit Wasser, dass alle Stückchen nass sind, aber nicht schwimmen. Einmal aufkochen und dann bei geringer Wärmezufuhr ungefähr 15 bis 20 Minuten köcheln lassen. Gieße danach das übrig gebliebene Wasser ab und lass den Kürbis sich abkühlen. Sobald er schön kalt ist, pürierst du ihn und fertig ist dein Püree. Und nun machen wir daraus zwei Köstlichkeiten. Spring dafür einfach zu den beiden anderen Rezepten.
Pumpkin Spice Latte für klein und groß
Zutaten pro Glas:
1 TL Kürbispüree
1 Espresso für große Leute
Eine Prise Zimt, Nelken, Ingwer und Muskat
Milch (wir nehmen gerne eine vegane Variante)
Agavendicksaft
Zubereitung:
Zuerst das Kürbispüree mit dem Espresso mischen, danach die Gewürze dazu (für kleine Leute geht auch nur Zimt) und erneut mischen. Mit aufgeschäumter Milch auffüllen. Wir machen gerne noch einen Klecks Agavendicksaft rein.
Vegane Kürbis-Pancakes
Zutaten:
150g Dinkelmehl
1 EL Zucker
1TL Zimt
2 TL Backpulver
1 Prise Salz
240 ml Hafermilch
140 g Kürbispüree
2 EL Kokosöl
Zubereitung:
Mehl, Zucker, Zimt, Backpulver und Salz mischen. Milch, Püree und Kokosöl dazugeben und kräftig mixen. Danach ruht der Teig ungefähr 10 Minuten.
In einer beschichteten Pfanne etwas Kokosöl zerlassen und kleine Pancakes backen. Sobald die Pancakes blasen werfen, wende ich sie. So gehen sie schön hoch und bleiben fluffig.
Wir dekorieren unsere Pancakes gerne mit Nüssen, Obst oder/und einer gesunden Zuckeralternative.
Auf dem Fotos siehtst du Apfelstückchen mit Zimt in Kokosöl angebraten.
